Easy Lentil and Sausage Soup

1 quart chicken broth
1 quart water
1 lb. dried brown lentils, rinsed
2 medium onions, chopped
28 oz can chopped tomatoes
2 large carrots, peeled and chopped
3 garlic cloves,  minced
12 oz precooked andouille or kielbasa, chopped (can be chicken sausage) 
1 tsp dried oregano
1 tsp salt
1/2 tsp pepper
1/2 cup extra virgin olive oil

 1. In a large stock pot bring stock and water to a boil.
2. Add all the ingredients and continue boiling for 15 minutes. Then lower heat to a simmer and cook another 30 minutes. 
3. Garnish with fresh oregano or parsley if desired. Serve with a drizzle of olive oil and a sprinkle of sea salt.
